| Tasting Notes: | This is a handcrafted wine in every sense of the word. Opaque, dark black-ruby color. The pronounced bouquet is quintessential Clone 6 Cabernet?dark cherry fruit, black olive, distinct minerality, with hints of roasted blackberry. These aromas are enhanced by intense vanilla-herb and baking spice scents from the new oak, which adds another layer of complexity. This vintage shows layers of flavor framed by firm, rich tannins and moderate acidity. A chewy finish and great fruit concentration suggest that this wine needs another two years in bottle before drinking, and upwards of 8-10 years aging from vintage to reach maturity. This is a great Clone 6, and best served with simple grilled lamb or a strong, firm cheese like Montgomery cheddar or Parmigiano-Reggiano. |
