About This Wine
The 2006 Shiraz fills this profile opening with an assertive nose of forest berry fruit and black pepper. Blackberry and bing cherry support the middle, highlighted by coffee, tobacco and toasty oak. The finish flaunts a bright acidity and focused tannin structure. The bold character of the Shiraz pairs well with a multitude of foods, especially grilled meats, pizza and winter-time stews.

Upon arrival at the winery, the grapes were gently destemmed and crushed before entering stainless steel tanks for fermentation. As part of the fermentation process, the grapes naturally push the skins to the surface creating a “cap” at the top of the juice. To enable better color extraction and tannin structure, daily pump-over was utilized to keep that cap in contact with the juice. When fermentation was complete and the wine was dry, it was aged for twelve months with a combination of French and American oak, imparting subtle coffee and toasted oak nuances.

Rarely a summer night goes by that the temperatures don’t dip under 55 degrees. As the driest of all coastal appellations, the Central Coast creates ideal growing conditions for this vigorous varietal, coaxing out the rich berry fruit flavors while retaining good structure and acidity.
