| Tasting Notes: | Crafted in an old-world style, the 2007 Pinot Noir has a rustic, easy-to-enjoy style. Ruby-red in color, the wine has a complex bouquet of spiced plum, strawberry and toasted oak. Flavors lay smooth on the palate with soft, supple essence of ripe cherry and rose petal. The finish lingers with a subtle hint of truffle earthiness that pairs nicely with a variety of foods, try with classic French fare such as duck pate, Coq au vin, or a light cassoulet. Working closely with a cooperative in Languedoc, the winemaking team put several blends together from the warmer, temperate growing regions of Languedoc known to produce a ripe, chewy pinot noir. To retain the bright fruit character, stainless steel tanks were utilized throughout aging with approximately thirty percent toasted French oak for subtle hint of brown spice and vanilla. |
| Vineyard Notes: | To answer the new-world demand for this old-world varietal, we headed strait to Pinot Noir's roots in France. The Languedoc region, framed between the Pyrenees Mountains to the West, the Rhone River on the East and Mediterranean Sea on the South, is one of the oldest wine regions, producing grapes dating back to early Greeks. Often referred to as le midi meaning land of the mid-day sun, the conditions are warm, arid and full of sunlight creating lush, soft and inviting fruit-driven wines. |

| Winemaker Notes: | Cool temperatures throughout the growing season marked Languedoc's 2007 vintage. A temperate summer prevailed with very few heat waves that have marked years past. Night temperatures remained cool throughout the summer. And although unsettled conditions developed late in the season, a north wind returned that kept fruit dry and canopy aerated throughout harvest. |
